~These are a family favorite, called Blue Ribbon Specials~ Ingredients:3/4 cup unsalted butter4 tablespoons butter flavored shortening1 1/2 cups light brown sugar1/2 cup baking coco2 large eggs2 teaspoons vanilla extract2 1/3 cups flour1 teaspoon salt1 1/4 teaspoon baking soda1 1/4 cup semi-sweet chocolate chips1 cup milk chocolate covered toffee baking bitsDirections:Combine flour, baking soda, coco and salt into a small bowl. Whisk dry ingredients together and set mixture aside. Cut butter into cubes and mix in a large bowl until soft. Today was the strangers last day.....her last day of chemo. How happy I was for her, because she had a new beginning, a clean slate. Every person in the room had a different story to tell. For her it was one of joy and relief that she could start again. I had woken up that morning with a giant knot in my stomach. A knot that was filled with uncertainty of what the future held. With my tumor markers on the rise, and prayers surrounding me from loved ones, my husband and I went to see my doctor. The word for 5 minute Friday is Real.... Real is life.... the good, the bad, and the ugly. Real is the laughter, joys and tears all rolled up into what makes us who we are.For me real is the many things that give my life shape and meaning. Real is waking up every morning with the Lord by my side ready to face a new day. Real is getting my daughter off to school, while talking about what the Lord is showing us in the Bible study we are doing together. Real is coming back home and helping my son with his studies. Walking in a breast cancer fighters shoes is not an easy thing. Yes... I used the word fighter....not survivor. It doesn't roll as smoothly off the tongue as survivor does. When you reach stage IV breast cancer that has metastasised to another part of the body, you have to fight. I am blessed to have a husband who is a wonderful cook. For our Sunday afternoon meal this past weekend, he made one of my favorite comfort foods, Mongolian Beef. This recipe was adapted from the March 2010 issue of a Weight Watchers magazine.Ingredients:1 pound of flank steak trimmed1 1/2 tablespoons cornstarch1/2 cup water1/3 cup firmly packed brown sugar1/3 cup less sodium soy sauce1 tablespoon canola oil3 garlic cloves minced1/2 teaspoon grated peeled fresh ginger1/4 cup sliced green onions1/4 teaspoon of red pepper flakes1 package of Basmati riceDirections:1.
