I am very fortunate to have a husband that not only loves to cook, but also makes very delicious meals. One of our recent favorite dishes is Feta-Stuffed Chicken Breasts. This recipe was taken from the Weight Watchers Ready, Set, Go! One of my favorite things to do is bake, and one of my favorite things to bake are chocolate chip cookies. Henceforth, my favorite Sesame Street character is the Cookie Monster (smile). This recipe was previously posted a few years ago, but they are so yummy I wanted to share them with you again. I hope you enjoy them as much as we do. ~These are a family favorite, called Blue Ribbon Specials~ Ingredients:3/4 cup unsalted butter4 tablespoons butter flavored shortening1 1/2 cups light brown sugar1/2 cup baking coco2 large eggs2 teaspoons vanilla extract2 1/3 cups flour1 teaspoon salt1 1/4 teaspoon baking soda1 1/4 cup semi-sweet chocolate chips1 cup milk chocolate covered toffee baking bitsDirections:Combine flour, baking soda, coco and salt into a small bowl. Whisk dry ingredients together and set mixture aside. Cut butter into cubes and mix in a large bowl until soft. I am blessed to have a husband who is a wonderful cook. For our Sunday afternoon meal this past weekend, he made one of my favorite comfort foods, Mongolian Beef. Can’t Leave Them Alone Bars
Last weekend my son and I decided to make a family favorite treat called, "Can't Leave Them Alone Bars". We found this recipe in the 2001 January/February issue of Quick Cooking.Ingredients:1 package of white cake mix2 eggs1/3 cup vegetable oil1, 14 oz. can of sweetened condensed milk1 cup semisweet chocolate chips1/4 butter or margarine cubed First combine dry cake mix with oil. Add two eggs. Mix ingredients together. Place two thirds of the mixture into a 9*13 greased pan. Melt chocolate chips, sweetened condensed milk and butter in the microwave on high for 45 seconds, stir. Melt for 45 seconds longer until chips are melted. Pour mixture over crust.
