When the chill of winter starts to welcome it’s way into the world, there is nothing better than having your favorite comfort foods ready to warm and nourish your family. One of our favorite foods is soup, with baked potato being at the top of the list. This recipe was given to me by a dear college friend, that I’m sure will be handed down from generation to generation in our family. I hope you enjoy it as much as we have.
Ingredients:
3 bacon strips, diced
1 small onion, chopped
1 garlic clove, minced
3 T. flour
1 tsp. salt
1 tsp. dried basil
1/2 tsp. pepper
3 cups chicken broth
4 or 5 potatoes – baked, peeled and cubed
1 cup half and half or canned milk
2 cups shredded cheddar cheese
Directions:
In a large saucepan, cook bacon until crisp. Drain, saving 1 tablespoon of the drippings. Set bacon aside. Saute onion and garlic in the remaining drippings until tender. Stir in flour, salt, basil and pepper, mix well. Gradually add broth. Bring to a boil; boil and stir for 2 minutes. Add the cubed potatoes, creme, cheddar cheese and crumbled bacon. Heat trough but do not boil again. { I double this for our family of four and we have leftovers the next day.}
