
I am blessed to have a husband who is a wonderful cook. For our Sunday afternoon meal this past weekend, he made one of my favorite comfort foods, Mongolian Beef. This recipe was adapted from the March 2010 issue of a Weight Watchers magazine.
Ingredients:
1 pound of flank steak trimmed
1 1/2 tablespoons cornstarch
1/2 cup water
1/3 cup firmly packed brown sugar
1/3 cup less sodium soy sauce
1 tablespoon canola oil
3 garlic cloves minced
1/2 teaspoon grated peeled fresh ginger
1/4 cup sliced green onions
1/4 teaspoon of red pepper flakes
1 package of Basmati rice
Directions:
1. Cut steak diagonally across grain into thin slices. Combine steak and cornstarch in a medium bowl. Toss until coated and set aside.
2. Combine water, sugar, red pepper flakes and soy sauce in a small bowl and set aside.
3. Heat oil in a large skillet over medium-high heat. Add garlic and ginger saute 1 minute. Add steak cook 3 minutes or until brown, stirring occasionally. Add brown sugar mixture cook 4 minutes until sauce thickens, stirring occasionally.
4. Serve over 1/2 cup of rice per serving, garnished with green onions.
